Sydney FC player Emerton, 34, is one of the most experienced members of the competition's first representative squad, having distinguished himself for many seasons with Feyenoord of the Dutch Eredivisie and then-English Premier League outfit Blackburn Rovers.
Also boasting 95 caps for Australia, All Stars coach Postecoglou believes Emerton is the perfect man to lead out his team-mates against United at ANZ Stadium on July 20.
"Brett is a very experienced player who has played football on the biggest stage and will be a great captain for the All Stars team," Postecoglou said.
"He's a player that has earned respect for what he has achieved and he'll be a good leader for this game.
"The match against Manchester United will be a huge occasion and Brett has been in that cauldron and will be a steadying influence on the rest of the team."
Emerton was chuffed to be selected to wear the armband and was looking forward to locking horns with the reigning Premier League title holders.
"It's a huge honour to be named as captain of the inaugural Foxtel All Stars team for what is a special night for Australian football," he said.
"There are some great players in this squad and it will be a thrill to lead the side out in front of 84,000 fans.
"Manchester United is a massive football club and we are all looking forward to what will be an unforgettable night."
Western Sydney Wanderers' attacking midfielder Youssouf Hersi has withdrawn from the squad as a precaution due to hamstring soreness, with Adelaide United's Marcelo Carrusca brought in as his replacement.
